Food-grade sodium metabisulphite’s uses: an antioxidant and food preservative
Sodium metabisulphite is a common reducing agent in the production of baked goods like biscuits, cookies, crackers and pastry; by reacting with disulfide bonds, it helps to loosen dough and accelerate the kneading process. This inorganic compound is primarily used in the winemaking process, however, added along with potassium metabisulphite in order to create the sulphur dioxide reaction.
This helps to prevent the growth of yeast and bacteria and extend the shelf life of the wine. It can be used as antioxidant and preservative in fresh and dried fruits, slowing down browning.
It can also be used as a preservative in jams, vegetables, wines and baked goods. A more niche use in the food industry includes as a pickling agent.
